Vegan Banana Pancakes

This recipe is a staple in my collection of Pancake recipes. These vegan banana pancakes were always a huge hit with crew on yachts, clients on retreats and anyone who has ever tried them.

You can enjoy these Vegan Banana Pancakes with many different toppings.

Simply let your imagination run wild.

Here are just a few examples of how I've served them over the last few years.

Of course, these vegan banana pancakes can also be eaten without any additions!!!

Powdered sugar | Cinnamon

Bananas (fresh or caramelized)

Peach│Nectarine (fresh or caramelized)

Blueberries│Raspberries│Strawberries

Pomegranate│Mango│Papaya

Maple Syrup│Honey

Caramel Sauce│Vanilla Sauce│Chocolate Cream (Nutella)

Vegan Banana Pancakes


Ingredients


  • 300 g ripe bananas, about 2 medium size

  • 4 tbsp maple syrup

  • 1/2 tsp salt

  • 4 tbsp vegetable oil

  • 240g flour

  • 1 1/2 tsp baking powder

  • 300 ml plant milk such as almond milk, or oat milk... depending on your preference


Directions


  1. Mash the bananas with a fork, mix with the maple syrup, salt, and oil make sure that the oil incorporates well with the remaining ingredients.

  2. In another bowl, mix the flour with the baking powder and create a well in the middle.

  3. Pour the banana mixture into the well, and stir in the plant milk with a whisk until everything is mixed.

  4. It is best to pour it into a jug-like container. A measuring cup works well.

  5. Heat a nonstick pan with a thin layer of vegetable oil. (I use a paper towel to spread the oil evenly throughout the pan) Ghee is also great.

  6. Once the pan is hot, pour the pancake mixture into the pan, about the size of an American pancake.

  7. Always pay close attention to the temperature. The pan should be hot enough for the pancake to be nice and golden brown, but not too hot as they might burn.

  8. Flip the pancakes when you can see that the batter is starting to set on the top and let it fry for a few seconds on the other side until golden brown. You can see when the dough is no longer liquid and small air pockets have formed on the surface.
